1. Wash and chop your favourite Autumn veggies. I used sweet potato, eggplant, baby carrots, parsnips, delicata squash, broccoli & red onion.
2. Put on baking tray and drizzle with olive oil, and sprinkle with sea salt
3. Roast in oven at 400 degrees Fahrenheit for 90 minutes
4. Enjoy with lean protein [fish, chicken, turkey, steak] or as a snack!
